Teddy Bear lasagne


Cook the rice following the instructions on the packet. Mix 25 g of crème fraiche with stock, rapeseed oil and white wine vinegar, and then stir through the warm rice.

Wash and quarter the tomatoes. Drain the sweet corn and defrost the peas. Pick the basil leaves and cut them into strips. Stir the tomatoes, sweet corn, peas and basil through the rice, then season with salt and pepper. Leave the salad to rest for 30 minutes.

Alternate layers of “Teddy Bear sausage” with the rice salad to create a lasagne – keep going until you have at least 3 layers. Top the lasagne with the remaining crème fraiche (25 g) and more peas if desired, then serve.

It also tastes great as a salad in summer – simply leave the finished dish to cool completely before serving.
