"Gardener" sandwich with Teddy Bear Sausage

Preparation

Mix the cream cheese and mineral water together until creamy. Finely chop the chives and parsley leaves. Peel the carrots and grate them finely. Stir the chives, parsley and carrot through the cream cheese. Chop the cress using scissors and add half of the chopped cress to the cream cheese mixture. Season with salt and pepper.

Top slices of toast and brown bread with the cream cheese mixture. Place two slices of “Teddy Bear sausage” on each slice of toast. Place the brown bread slices on top with the cream-cheese side facing upwards. Cut the sandwiches into triangles. Quarter the remaining 4 slices of sausage. Wash and halve the tomatoes. Top each sandwich with sausage and half a tomato. Use cocktail sticks to hold the sandwich in place.

Garnish the sandwiches with the leftover cress and serve.
